Beet Root, Raspberry, & Cacao Single-Serve Baked Oats

This simple baked oats recipe might just be one of my favorites yet. The addition of beet root powder made these oats a gorgeous red color and packed additional vitamins and nutrients without compromising the flavor!

Recipe

  • 1 Ripe Banana mashed (for sweetness & texture)

  • 1/2 cup Rolled oats (I used Kodiak Cakes protein oats for extra protein)

  • 1/2 cup Unsweetened Vanilla Almond Milk (any milk or non-dairy milk should work)

  • 1 tsp. Organic Beet Root Powder

  • Fresh Raspberries

  • Cacao Nibs

    Instructions

    1. Combine wet ingredients (mashed banana, non-dairy milk) in a ramekin or small oven-safe dish.

    2. Add in your dry ingredients (rolled oats, beet root powder) and mix until texture is thick.

    3. Top with fresh raspberries and sprinkle with cacao nibs.

    4. Bake on 375F for approx. 20-25 minutes or until the edge is golden brown and the desired consistency is reached. Let cool and Enjoy!
